2 rashers of Bacon, rind removed, finely chopped
8 Sheet Filo Pastry, thawed
50g Butter, melted
6 eggs, lightly whisked
1/2 cup shredded cheese
1/2 cup thickened cream
250g chopped spinach
Step 1: Preheat oven to 180C. Heat a non-stick frying pan over medium heat. Cook the bacon, stirring until crisp and then transfer to a plate and set aside.
Step 2: Grease a 20cm (base) pie dish an then place the filo on a clean work surface. Brush a filo sheet with a little butter and then fold in half crossways. Place this is the dish allowing it to overhand and repeat with the remaining filo and butter, turning and overlapping each sheet slightly to line the dish completely.
Step 3: Whisk the egg, cheese and cream into a jug and season. Arrange 3/4 of the bacon and spinach over the filo, then pour over the egg mixture. Top with the remaining bacon and spinach and then bake for 30 mins or until golden brown and set.
