400g Hokkien noodles
1 tbsp peanut oil or canola oil
1 tbsp shredded ginger
2 tbsp black bean sauce
1 tbs honey
1 bunch baby bok choy, trimmed and roughly chopped
1 bunch broccolini trimmed and roughly chopped
100g snow peas
Step 1: Place the noodles in a heatproof bowl and cover with boiling water. Stand for 5 minutes then drain and set aside.
Step 2: Heat the oil in a wok or large frying pan over medium-high heat. Add the ginger and cook for 2 minutes then add the combined black bean sauce and honey. Cook for a minute before adding the bok choy and broccolini. Stir-fry for 2-3 minutes, add the snow peas and noodles and toss to coat in the sauce. Cook for another minute then serve immediately.
