Almond Croissants

75g butter, room temperature

1 cup almond meal

¼ cup icing sugar

2 tablespoons plain flour

1 teaspoon vanilla essence

½ cup flaked almonds

4 pack of croissants split lengthways

Icing sugar for dusting


Step 1: Preheat oven to 180c. or 160c. fan-forced. Line a baking tray with baking paper, lay the croissants on the tray and bake for 5 minutes.

Step 2: Meanwhile, place butter, almond meal, icing sugar, flour and vanilla essence in a food processor. Process until it forms into a smooth paste.

Step 3: Open out each croissant flat and spread 1 tablespoon of mixture over each croissant and close to sandwich together. Spread another teaspoon of paste over the top and sprinkle with flaked almonds, bake for another 5-10 minutes or until golden. Dust with icing sugar to serve.
