Avocado Wedges

Preparation: 10 minutes / Cooking Time: 15-20 minutes / Serves: 4

Ingredients:

4 avocados

1 cup of plain flour

Chilli salt and pepper to season

2 eggs, beaten

1 packet of corn chips

Vegetable oil

Method:

Step 1: Peel and cut avocados into wedges approx 0.5 – 1 cm thickness

Step 2: Place flour in a bowl and season with chilli salt and pepper

Step 3: Place corn chips in blender or food processor and blend well OR you could put the corn chips in a zip lock bag and crush with a rolling pin.

Step 4: Crumb avocado wedges with flour, egg and then coat in the crushed chippies.

Step 5: Add a generous amount of oil to a wok or saucepan and heat to 180°C over medium heat, then fry the avocado wedges in small batches until golden grown

Step 6: After cooking place the avocado onto a plate lined with paper towels to catch excess oil. Allow to cool and then serve.
