Halloween Bat Cookies

Preparation: 45 minutes / Cooking Time: 12 minutes / Makes: 40


250g butter

90g icing sugar

2tsp natural vanilla extract

225g plain all purpose flour, sifted

150g self raising flour, sifted

Black writing icing and small orange lollies to decorate


Step 1: Preheat the oven to 180°C. Line two baking trays with baking paper and using an electric mixer, mix the butter and sugar until light and creamy. Beat in the vanilla. Use a non-serrated knife to mix the combined sifted flours and cocoa powder until the mixture clings together in small clumps.

Step 2: Gather the dough together and turn out onto baking paper. Divide the dough in half and roll the portions out onto baking paper 7 mm thick. Place onto trays and refrigerate for 15 minutes until firm.

Step 3: Cut out shapes using a bat shaped cookie cutter. Repeat with the other portion. Gentle re-roll all the dough scraps and cut out more bat shapes. Place onto the trays lined in baking paper and bake for 12 minutes. Let cool for 5 minutes on the tray and then transfer to a wire rack to cool completely.

Step 4: Trace around the outline of each cookie and mark lines on the wings with writing icing. Make 2 dots for the eyes and stick the lollies on them (you could even usecandy eyes), leave to set and then enjoy!
