Quick and Easy Bruschetta

Preparation: 5-10 mins / Serves: 4

Ingredients:

4 medium diced tomatoes

Chopped basil leaves

2 garlic cloves

Sea salt

1 baguette

6 tbsp extra virgin olive oil

Method:

Step 1: Combine tomatoes, basil, garlic and then sprinkle with a little bit of salt. Refrigerate this mixture.

Step 2: Cut the baguette diagonally into roughly 1/2 cm – 1 cm thick slices.

Step 3: Just before serving, add the balsamic vinegar to the mixture and let it stand for 5 minutes or plate up the baguette, put the mixture on top and then drizzle the balsamic vinegar on top.
