- 500g tomatoes cut into wedges
- 2 tbsp brown sugar
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- ½ garlic clove, crushed
- ¼ cup basil, chopped and extra to serve
- 1 small red onion, finely chopped
- 4 sourdough rolls
Step 1: Combine the tomato, sugar and oil in a medium bowl. Heat a large frying pan on high and cook the tomato, stirring it occasionally for 2 minutes or until charred and softened. Return to the bowl and set aside for 5 minutes to cool.
Step 2: Add the vinegar, garlic, basil and onion to the tomato mixture, toss to combine. Season and divide the tomato mixture among the slices of bread. Top with extra basil and serve immediately.
