- 75g butter, room temperature
- 1 cup almond meal
- ¼ cup icing sugar
- 2 tablespoons plain flour
- 1 teaspoon vanilla essence
- ½ cup flaked almonds
- 4 pack of croissants split length ways
- Icing sugar for dusting
Step 1: Preheat oven to 180c. or 160c. fan-forced. Line a baking tray with baking paper, lay the croissants on the tray and bake for 5 minutes.
Step 2: Meanwhile, place butter, almond meal, icing sugar, flour and vanilla essence in a food processor. Process until a smooth paste forms.
Step 3: Open out each croissant flat and spread 1 tablespoon of mixture over each croissant and close to sandwich together. Spread another teaspoon of paste over the top and sprinkle with flaked almonds, bake for another 5-10 minutes or until golden. Dust with icing sugar to serve.
